
Fredericksburg, TX: Our Story
Fredericksburg–a popular tourist spot tucked in the Texas Hill Country–is well known for its beer and wine, German influence, museums, festivals, and peaches.
Although it has come a long way in making a name for itself in the tourism industry, Fredericksburg has a rich 175 year history with quite different beginnings. It was founded by German immigrants under the Society for the Protection of German Immigrants in Texas on May 8, 1846 in Gillespie County [1] .
These Germanic roots are still very evident today. As the town grew it was influenced by its surrounding neighbors–they made a Peace Treaty with the Commanche tribe of the area and learned to live and farm off the land from a nearby Mormon settlement [1].
With the growth of both the town and outside influences, Fredericksburg began opening its doors to the public–beginning its shift from an insular community to the town we know today.
As of today, one of the main attractions is Main Street–a wonderful merging of shops and restaurants that allows for a wide variety of experiences (Wine trail anyone?). Fredericksburg has over 75 wineries, vineyards, and wine tasting rooms. That coupled with museums, festivals, and nearby natural attractions makes Fredericksburg the perfect spot to grow some roots…and make some Flying Cow tallow too it seems.

It’s no wonder it caught the attention of the Arceneauxs–who weren’t in search of a new store location, but simply going on a weekend getaway in early 2020. It hadn’t been a full year since the opening of Flying Cow in Midland and Britney and Joshua were on their way to San Antonio to visit their favorite hotel Hotel Emma.
On their way there, as many do, they stopped in Fredericksburg, TX and noticed an available spot on Main Street. They mentioned it to some friends (who happened to be realtors) during lunch and found out that the owner didn’t like working with realtors and out of curiosity ended up meeting with Joshua and Britney in person that same day.
Everything seemed to fall into place. The space was beautiful and would not need a whole lot of renovation or construction work, as opposed to the Midland store that they had built from the bottom up. It was also on a historic and charming Main Street and had a lot of traffic! It was too perfect to pass up.
It turned out that the owner was looking for something specific, which was the main reason why that spot was still available, and the Arceneauxs, with their family owned and operated small business, checked the boxes. It was later that they realized what an honor it had been to be accepted and welcomed into the tight knit community of Fredericksburg.
After continuing on to San Antonio, instead of having relaxing getaway, it turned into a weekend of dreaming and planning. Britney’s Brother-in-law, Cesar, who had been starting and managing H-E-B’s was down to manage what would become the newest Flying Cow store.
Within twenty-four hours, they had found a location, had an agreement with the owner to use it, and had a manager. Talk about mind-blowing.
What followed was a very special and intimate time of coming together with family and friends to build and fulfill with their own hands the vision of the Fredericksburg store during the tumultuous time that was 2020. Finally, in November of 2020, Flying Cow opened its doors in Fredericksburg, TX!
It has been five years now, and we are planning to be here for many more years to come.
We love being a part of this amazing community and are excited to show you some of our favorite local spots and attractions.
Festivals
A great attraction of Fredericksburg is the festivals! The most popular and well loved by us here at Flying Cow is Oktoberfest–the largest festival in Fredericksburg, TX. Oktoberfest is a three day festival that takes place in the first weekend of October and celebrates Frederickburg’s German roots. We love being a part of Oktoberfest and you’ll usually see us sporting some special shirts for it designed by our favorite local artist @lizaproch.
But Oktoberfest isn’t all the Hill Country has to offer! During Winter the Christmas Night of Lights is a must see and In the Spring you can enjoy the Bluegrass Festival at Luchenback and Becker Vineyard’s Lavender Festival [3]. You also don’t want to miss Peach Fest in June, where peach growers from all across the Hill Country come together and sell their amazing peaches.
Museums

A popular museum is the National Museum of the Pacific War. It’s the perfect way to immerse yourself in the history of the time and those that lived through the Pacific War. You can also enjoy the history of those first German settlers through Fredericksburg's Pioneer Museum and the Vereins Kirche Museum [2]. You also don’t want to miss the Lyndon B Johnson National Historical Park which is a Dark Sky Park and allows access to the LBJ ranch, the Texas White House and many other historical sites.

One more thing that Fredericksburg excels at, is its food scene.
We could go through and name each place in Fredericksburg and we wouldn’t miss, but we’ll just name a few of our favorite places–places such as Hill and Vine, Vaudeville Bistro, and La Tequiera Machete. Fredericksburg has such amazing locally owned restaurants that half the fun is seeing how many you can try in a visit!
Coffee/Treats

To be able to experience all the fun things, you definitely need a pick-me-up. A couple of our favorite coffee shops are Java Ranch and Caliches. Another thing you’ll definitely need is a sweat treat, and Clear River is the perfect spot for that! You’ll fall in love with their ice cream or their homemade cookies. Or stop by Sunday Supply for picnic supplies or fun items.
Our absolute favorite spot is our neighbors Pritzer Sweet Shop. The treats are so good, you will smell them when you come into our Flying Cow shop! They have been passing down the family tradition of German baked goods for generations. The owner’s ancestors even helped found and establish Fredericksburg, TX itself! Chocolate dipped peanut butter sandwich cookie is a personal favorite of Joshua and Britney.

Now that you have a pick-me-up, it’s time to shop. Here are some of our favorite boutiques. Natural Baby is a great place to stop by for the kids and All Gussied Up is great for the moms. But don’t worry, there’s also options for the guys, Something For Men offers hats, wallets, and boots. Overall, Fredericksburg has over 150 locally owned stores. That means that there is something for everyone.
Nature

Being in the Hill Country, Fredericksburg is also perfect for those that enjoy the things of nature. There are a few rivers nearby that are great for recreational water activities like canoeing and tubing. The Pedernales River is a major river that flows through Gillespie County, and we also love the Guadalupe River that isn’t too far away itself.
Outside of water fun, hiking is another loved outdoor activity. Enchanted Rock, that’s 17 miles north of Fredericksburg, is a great place to hike, camp, or rock climb!
Or if you want to keep it in town, Baron’s Creek is just a skip away–and a great place to fish post work, according to Cesar Parra (the Fredericksburg,TX store manager).
Wineries

We can’t talk about Fredericksburg without talking about wine. It is the epicenter of wine country after all. A popular tourist attraction is the Texas Wine Trail where you can take a self-guided tour of the wineries that are found throughout the hill country. It’s the perfect way to enjoy both scenery and some wine tasting.
